Menu Plan Monday


Last week went well, except for the Mexican skillet I was so excited to try and report out about...I forgot we were going to big T's football game Friday when I was planning meals, and we ate leftovers I packed once we got to the field instead. I defrosted some ground turkey and plan to fix the skillet on Monday. I will report out about it this week in a separate post, recipe included if all goes well.

This week EmDee is working overtime Wednesday through Saturday. Tuesday is our anniversary, so I'm hoping to have a little something special for dinner that night. We grilled on Sunday, providing lunches for the week and dinner one night (in addition to Sunday) The extra pumpkin pancakes were delicious for breakfast last week, especially later in the week when I spread homemade applesauce on top. All out of pancakes this week, so it's back to my usual oatmeal with fruit and a fiber bar.

Lunches: Brats and pasta salad

Dinners:
Monday: Hamburgers, oven fries and green salad
Tuesday: Mexican rice skillet, nachos, jello cake
Wednesday: Pulled pork with mashed potatoes and green salad
Thursday: southwestern grilled chicken salad
Friday: Leftovers at big T's game

I've got one pork loin left in the freezer; maybe I'll have it turn into your pulled pork...
