Menu Plan Monday


Last week's menu was a success, which I guess shouldn't be surprising since it was pretty simple and mostly made ahead of time. The grilled leftovers "make something tasty out of whatever is left" meal ended up being pretty much a potluck - I made up a plate of chicken and added a drizzle of Sweet Baby Ray's Barbeque sauce (my all time favorite) with a side of oven fries and mac n cheese. I made up another plate with steak, mashed potatoes and gravy and pasta salad. EmDee and I took turns passing the two plates back and forth! Sweetpea had mac n cheese, slices of chicken and steak, and some bites of mashed potatoes and gravy. Nothing fancy, but it was good.

We finished the meal off with a quick trip to the local ice cream shop - they just started serving pineapple Dole Whip, have you ever tried it? We had it on a vacation and LOVED it, I was so excited to see they started carrying it, and it was just as delicious as I remembered. Sweetpea loved taking licks from my cone and bites when we got down far enough.

This week will be a bit more structured.

Breakfasts will be Fiber One chewy granola bars (sounds kind of like cardboard, right? The carmel flavor is decadent and the peanut butter is fabulous as well!) and oatmeal with blueberries and craisins. I eat the fiber bar on the way to work and the oatmeal as a mid morning snack.

Lunches will be salad, yogurt, and tomatoes with cottage cheese

For Dinner:

Monday - pasta bake and garlic bread

Tuesday - Chicken Marsala (follow recipe substituting chicken for veal, I pound the chicken thin) and green beans

Wednesday - spaghetti and meatballs and salad

Thursday - Chicken Divan and corn on the cob

Friday - Layered taco salads

Each week I say I'm going to join in on Menu Monday but never do! Looks like you got a great menu going. I love it when we grill out chicken and can eat on it the rest of the week. Makes a yummy salad!
