Menu Plan Monday

I hope everyone had a wonderful week! I have nearly had my fill of turkey...nearly. As much as I love Thanksgiving dinner, I think I get even more excited for the leftovers! Back to reality this week? I'll be eating salads this week for lunch, probably with some soup, to make up for this past week's overindulgence. Here's what we're planning for dinner:

Monday: Spaghetti with garlic bread
Tuesday: Beef and noodles
Wednesday: Tater tot casserole
Thursday: leftover buffet (would you like beef, or beef?)
Friday: breakfast for dinner - more yummy pumpkin banana pancakes

I am also planning to make apple pumpkin crisp and peppermint ice cream this week...yum!

Oooo...thanks for the reminder! It has been a bit since we had pumpkin pancakes! Your menu looks good - we also have to start cooking again as I think we are finally making our way through the leftovers. My husband will be so disappointed!

Sounds like a great week! I'm glad there are more working mom's out there blogging :) The way I plan stuff is Tuesday and Thursdays are my late nights so I try to do crock pot recipes or leftovers for those nights. Weekends are usually more carefree and sometimes I don't stick to my plan, it's a 50/50 lol. The rest of the week I try to figure out what time I get home from work and how much time I need to cook certain things. What about you?

LOL! Yes, I plan on eating a lot of salads to make up for this last weekend too! I didn't mean to overindulge, but I just can't say no when someone hands me so much delicious food!

Peppermint ice cream sounds devine! Do you have an ice cream maker?
