Weekday cooking the easy way...

I'm cooking from the freezer for the most part this week, thanks to the times over the past two months that I was able to make extra to freeze for weeks such as this! Evenings this week are going to be pretty crazy, so I didn't want to sign up for anything complicated. Do you have weeks like that? What are your standy recipes, I'd love to hear them! Here's what is on our menu this week:

Monday: cheesy meatball sandwiches and pasta salad
Tuesday: cream of potato soup and toasted ham and cheese
Wednesday: Family night out! (buy one get one free Mexican)
Thursday: leftovers
Friday: Pop up pancakes

That sounds like a plan!

We are having some brown sugar glazed salmon tomorrow night.

Tonight is going to be homemade cornbread and home canned veggie soup, candied sweet potatoes and pineapple casserole.

Last night was german baked apple pancake and turkey sausage patties with hot coffee.

I LOVE German pancakes. My mom taught me how to make them when I was 16 because I wanted them just about every morning :) I've never seen them done in muffin pans, and I love that idea!

I love the idea of freezer cooking. But don't have time to do the mass-freezer-cooking to begin with!!

This is such a great idea. I have a friend who was looking for some freezer recipes as she prepares to welcome a new baby and is hoping to get some things into the freezer to help lesson the load those first few days.
